Reverse spherification: 1, 2 or 3 minutes in the bath
One base recipe and a single variable: how long each sphere spends in the alginate. Everything else stays the same.
What stays the same
- Liquid: 150 ml concentrated grapefruit juice with 2.5 g calcium lactate gluconate
- Bath: 5 g sodium alginate in 500 ml water, rested for an hour
- The same spoon to portion every sphere
- The same rinse in clean water when lifted out
What changes
Time in the bath
- 1 min
- 2 min
- 3 min
What we measure
- Thickness of the membrane
- Whether it holds when lifted with the spoon
- How it bursts in the mouth
- How it looks after 30 minutes in its liquid

How we run comparisons
One base recipe, one variable, the same conditions for every sample, a photo of each one and a blind tasting.
